_builder_version=&#8221;3.27.4&#8243; _i=&#8221;0&#8243; _address=&#8221;2.0.0.0&#8243;]<\/p>\n<h2>Looking Pretty<\/h2>\n<p>Microgreens, the young seedlings of edible vegetables and herbs, aren&#8217;t just for enhancing the presentation of well-plated food by chefs at high-end restaurants anymore.\u00a0 Microgreens have come into their own as a nutrient-dense food that contain even more vitamins, minerals and antioxidants than their full-sized counterparts.\u00a0 For this reason, you&#8217;ll regularly find fresh microgreens for sale at most farmers markets and upscale grocery stores in major metropolitan areas. Most often, microgreens are used fresh and uncooked.<\/p>\n<p>A commonly cited study by the University of Maryland published in the Journal of Agricultural and Food Chemistry states that microgreens contain between 4 to 40 times more nutrients by weight than their fully grown counterparts.<sup><a href=\"#1\">1<\/a><\/sup> Of the 25 different microgreens that were tested in this study, <a href=\"https:\/\/riverforkfarms.com\/fresh\/product\/microgreen-cabbage-red\/\">red cabbage<\/a>, <a href=\"https:\/\/riverforkfarms.com\/fresh\/product\/microgreen-cilantro\/\">cilantro<\/a>, <a href=\"https:\/\/riverforkfarms.com\/fresh\/product\/microgreen-amaranth\/\">garnet amaranth<\/a>, and <a href=\"https:\/\/riverforkfarms.com\/fresh\/product\/radish-blend\/\">green daikon radish<\/a> had the highest concentrations of\u00a0 Vitamin C, vitamin K, and vitamin E, ascorbic acids, carotenoids, phylloquinone, and tocopherols, respectively.<\/p>\n<p>A small handful of microgreens can include the same amount of nutrients as an entire plate full of the same vegetable, more than you&#8217;d ever eat, so just a little goes a long way.<\/p>\n<p>Research has also discovered that microgreens contain a healthy measure of polyphenols which help reduce the risk of heart disease, cancer, and Alzheimers by preventing the buildup of free radicals in our bodies.<\/p>\n<p>Microgreens vary in taste, from mild to spicy, slightly tangy or even bitter all depending on the variety. The flavors of microgreens are typically described as being strong and concentrated.<\/p>\n<p>So in summary, microgreens are low on calories, high on nutrition, packed with concentrated flavor, and yes, they&#8217;re pretty to look at too.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3 class=\"green-accent\">CELERY<\/h3>\n<p>Celery is a low-energy vegetable. Due to the low level of calories, celery is suitable for diets. Celery contains certain amounts of vitamins C, K, B2 and dietary fibers. Celery was initially used as medicine in the treatment of toothaches, insomnia, hypertension, anxiety, arthritis, rheumatism and to purify the blood.<\/p>\n<h3 class=\"green-accent\">BROCCOLI<\/h3>\n<p>Did you know broccoli is a member of the cabbage family, making it a cruciferous vegetable? Its name is derived from the Italian word broccolo, meaning the flowering top of a cabbage. The average person consumes about 6.6 pounds of broccoli each year! Eaten raw,\u00a0<u>broccoli has a number of nutritional elements<\/u>. It\u2019s important to note that broccoli is best when eaten raw, because cooking and processing destroys some of its antioxidants. It has twice the vitamin C of an orange, almost as much calcium as whole milk (with a better rate of absorption), and contains anti-cancer and anti-viral properties with its selenium content.<\/p>\n<h3 class=\"green-accent\">ARUGULA<\/h3>\n<p>Arugula greens are rich sources of certain phytochemicals such as indoles, thiocyanates, sulforaphane, and iso\u001fthiocyanates. Together, these compounds have been found to counter carcinogenic effects of estrogen and thus may offer protection against prostate, breast, cervical, colon, ovarian cancers by their cancer-cell growth inhibition, cytotoxic effects on cancer cells.<\/p>\n<h3 class=\"green-accent\">ASPARAGUS<\/h3>\n<p>Asparagus is one of the most nutritionally balanced plant-derived foods. Low in fat, cholesterol, and sodium, asparagus also has vitamin A (also known as retinol because it produces pigments in the retina), E (has strong antioxidant properties, meaning it reduces oxidative damage caused by oxygen, which can harm human tissue, cells, and organs), and K (which helps your blood clot), magnesium, zinc and selenium, as well as fiber, thiamin, riboflavin, niacin, vitamin B6, iron, copper, and manganese.<\/p>\n<h3 class=\"green-accent\">BEETS<\/h3>\n<p>While beets contain more sugar than any other vegetable on the table, they\u2019re low in calories, fat, and cholesterol. They\u2019re also an excellent source of fiber, vitamin C, magnesium, and folate, which helps make and maintain RNA and DNA cells and prevent anemia. They also contain potassium, which is necessary for building muscle and regulating the heart\u2019s electrical activity, and manganese, which helps maintain muscle and nerve function, build bone strength, regulate blood sugar levels, and promote a healthy immune system. Betaine, an amino acid in beets, inhibits the formation of cancer-causing compounds and is protective against colon and stomach cancer.<\/p>\n<h3 class=\"green-accent\">CILANTRO<\/h3>\n<p>Cilantro herb is very low in calories and contains no cholesterol. However, its deep-green leaves possess good amounts of antioxidants, essential oils, vitamins, and dietary fiber, which may help reduce LDL or \u201cbad cholesterol\u201d levels in the blood. Fresh cabbage is an excellent source of natural antioxidant; vitamin C. Provides 36.6 mg or about 61% of RDA per 100 g. Regular consumption of foods rich in vitamin-C helps the human body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals.<\/p>\n<h3 class=\"green-accent\">RADISHES<\/h3>\n<p>Radishes are a good source of vitamin-C; provide about 15 mg or 25% of DRI of vitamin C per 100 g. Vitamin-C is a powerful water-soluble antioxidant required by the body for the synthesis of collagen.
